Protein Packed Bean Salad

This is a tasty bean salad perfect for lunch. This is also a protein-packed meal and so will keep you fuller for longer.
Ingredients

½ cup quinoa, rinsed
340 g shelled edamame
340 g corn
400 g black beans, rinsed
1 red bell pepper, diced
1 small red onion, diced
optional – avocado & coriander for garnish
Dressing
1 large lime, juiced
1 tsp cumin
¼ tsp cayenne pepper
½ tsp sea salt
water, to thin if needed

Cook quinoa per directions on the package.

Rinse and drain the black beans.

Once quinoa is cooked and cooled, combine with beans, corn, peppers and edamame in a large bowl.

In a small bowl, combine all dressing ingredients. Pour dressing over salad, toss to combine and serve!
