Cheesy Tempeh dish with quinoa. If you love cheese this is for you and it is full of yummy healthy ingredients to keep your energy levels high and keep your healthy lifestyle on track.

Ingredients
 2 tbsp extra virgin olive oil, divided
 ½ red bell pepper, sliced
 ½ green bell pepper, sliced
 ½ yellow onion, sliced
 ½ cup mushrooms, sliced
 ½ package of seasoned tempeh, sliced
 1 tsp oregano
 ½ tsp paprika
 2 slices cheese, your choice
 2 tbsp filtered water
 1 cup cooked quinoa
Directions

Heat 1 Tbsp of oil in a skillet over medium heat. Add in the peppers and onion. Cook until they start to soften, about 5 minutes.

Add in the mushrooms and cook for another 2 minutes then set aside.

Clean the pan and add the remaining oil. Add the tempeh, oregano and paprika. Cook stirring frequently, until the tempeh is browned.

While the tempeh is cooking, add your cheese slices and water to a saucepan and cook over low heat, stirring continuously until it becomes saucy.

Place the quinoa in a bowl and top with the tempeh and veggies. Spoon the cheese sauce on top and serve immediately.
