Cream Of Asparagus Soup

A light healthy soup that is full of health and vitality. Perfect for an easy and quick mid-week meal.

Ingredients
 ½ cup chopped onion
 40 asparagus spears cut into 1"
 3 cups veggie broth
 ½ cup canned coconut milk
 ½ cup raw cashews, chopped
 2 tbsp fresh lemon juice
 2 tsp grated lemon peel
 1 tbsp finely chopped dill
 1 tsp sea salt
 ½ tsp black pepper

Heat a large stockpot, lightly sprayed with oil over medium heat. Add onion and cook for 5 minutes or until translucent.

Add asparagus; cook for 5 minutes.

Add the broth, coconut milk and cashews and bring to a boil. Reduce heat to medium-low and gently boil for 20 minutes or until asparagus is tender.

Add the remaining ingredients.

Using an immersion blender, blend until smooth.

Divide evenly between four serving bowls and enjoy!
