Colourful Fiesta Rice

A delicious healthy dish consisting of black beans, tomatoes, peppers, onions, corn and avocado with a zesty dressing to give it a kick!
You will want to cook your brown rice according to the package the day before and have it chilled.
Then in a small mixing bowl whisk together the oil, lime, coriander/cilantro, cumin and garlic.
To a large bowl, add the rice, beans, tomatoes, pepper, corn, onion and avocado.
Pour the lime mixture into the bowl and toss evenly to coat.
Season with salt and pepper. Taste, adjust and enjoy!
